The project involves the complete redevelopment of the existing restaurant to create a unique contemporary dining experience in Covent Garden.
The units currently operate as a restaurant on the first floor with a separate ground floor café. It includes a restaurant, a bar, a private room and back-of-house facilities including toilets, kitchens, office, storage and service areas.
Currently there are operational constraints in terms of the overall presence of the restaurant, a cramped kitchen space, access to the unit from different entrances, the efficiency of the back-of-house areas and the redundancy of outside areas in winter months. The project will incorporate the ground floor of the north-eastern pavilion as an entrance and include the refurbishment of the back-of-house areas in the east / west ranges.
